Herb Roasted Chicken Breast Cold Cuts

Great way to cut down on processed foods is to make your own cold cuts. Herb Roasted Chicken Breast is not only easy to prepare, but a wonderful and tasty addition to any packed lunch. When I'm roasting chicken breast for dinner, I usually try to add few extra breasts and use them throughout the week for lunches, as antipasti, in sandwiches or in salads. Play around with the herbs. You can make it more picante with the addition of cayenne pepper or go the Indian spice route by marinading the chicken breast in yogurt and tandoori spices before roasting.

Herb Roasted Chicken Breast Cold Cuts

1Preheat oven to 450F

2Place chicken breast on a pan. Sprinkle with herbs and salt. Add olive oil and lemon. Roast in the oven for 25 minutes, till done.

3Cool and cut into thin slices.


2 Chicken Breasts

2 tbs of herbs de provence

4 tbs of olive oil

Pinch of seal salt

3 tsp of lemon juice
