Mini Blueberry Donuts

Mini donuts hold a great appeal to me and to my children. They are cute. They are easy to make. And they're mini - which is perfect for the after school snack. After trying several recipes and their variations, this is the one I started going back to time after time.

Baked Mini Blueberry Donuts Recipe with Lemon & Lavender Glaze

225g/ 8 oz plain flour
1 tsp vanilla extract or vanilla powder
175g/ 6oz sugar
1 tbsp melter butter (optional - I made without and tasted just as good)
2 tsp baking powder
175 ml/ 6fl oz milk
2 large eggs, beaten
1/2 tsp salt

3/4 cup frozen blueberries

Combine all ingredients and mix well. Condition the mini donut pan (I use Judge) with a bit of oil. Pour mixture into the wells, about 3/4 full. Place several blueberries on top of mixture in each well. Bake in the center of a pre-heated oven at 160C or 325F. Bake for 15 minutes. Allow to cool. Coat with lemon glaze and sprinkle with dried or fresh lavender flowers.

Pretty, tasty and kids love it. And did I mention they're too easy to make? Remember to portion control!
